Sweet potatoes aren’t just for Thanksgiving dinner. In fact, they’re delicious in both sweet and savory meals anytime of the day! Breakfast is actually one of my favorite times to enjoy sweet potatoes; I put together a round up of my favorite sweet potato breakfast recipes so you can enjoy them with your morning coffee, too.

I love a good, hearty breakfast to keep me full all day, and sweet potatoes definitely fit that bill. Plus, they go well with so many different flavor combinations. Perfect for mixing and matching!

And with my sweet potato microwave hack (which I’ll get to later in this post), it won’t take forever to roast them, either!

Sweet Potatoes for Breakfast

Sweet potatoes and eggs go especially well together. If you’ve ever tried eating roasted sweet potato topped with a fried egg (and maybe a little maple syrup), you know what I’m talking about. Yum!

In addition to some of my favorite savory sweet potato breakfast combos, I’ll also be sharing a tasty muffin recipe. Because while eggs are fabulous, sometimes I crave something that’s easier to transport when I’m on the go with Riese!

1. Make-Ahead Breakfast Burritos with Sweet Potato

These freezable breakfast burritos taste amazing with roasted sweet potatoes in them!

They’re super versatile, too: toss in any leftover meat or veggies you have along with the scrambled eggs and your favorite sauce. It’s pretty much guaranteed to be delicious!

They’re perfect for meal prep, too. Just make them at the beginning of the week and freeze them until you’re ready to eat. The recipe post, linked above, includes all the freezing and reheating instructions!

2. Poached Egg & Sweet Potato Hash

I love the softness of poached eggs, and the runny yolk makes a really great “sauce”! Paired with crispy cubed sweet potatoes, they make a scrumptious breakfast.

This recipe also uses ham, but you can always swap it out for another breakfast meat, or mushrooms or another veggie. Make it yours!

3. Sheet Pan Egg & Veggie Hash

This recipe is technically made with red potatoes, but you can easily swap those out for some cubed sweet potato instead!

I love how the eggs look nestled in with the veggies. It’s pretty, nutritious, and tasty all at once!

4. Sweet Potato Coconut Muffins

If you’re looking for a sweeter and more portable option, try these sweet potato muffins with coconut and cranberry. Not only are they soft and delicious, but they’re also healthy!

These muffins are packed with nutrition from the whole wheat flour, flax, sweet potato, and more. Plus, the flavor combo is pure bliss. This is an old recipe of mine that has always been a favorite!

5. Breakfast Tacos with Avocado Crema

Just like with the breakfast burritos, these scrambled egg and veggie tacos would be amazing with leftover roasted sweet potato. And with the avocado crema drizzled on top? Perfection.

Feel free to get creative with the ingredients in these, too – they are easy to switch up!

6. Sweet Potato, Prosciutto & Goat Cheese Strata

This recipe actually calls for butternut squash, but sweet potato has a similar flavor and texture, and would be a great substitute. Strata is great for brunch because it looks fancy, but it’s also pretty easy to make!

Crumbled goat cheese, eggs, crusty bread, sweet potato, and prosciutto – what more can you ask for?!

Sweet Potato Microwave Hack

Did you know you can save a ton of cooking time by microwaving sweet potatoes instead of roasting them in the oven? It only takes about 10 minutes, and it’s super easy!

Here’s how to microwave a sweet potato. Seriously one of my favorite kitchen hacks.

Are Sweet Potatoes Good for You?

Absolutely! Sweet potatoes are super nutritious: they’re full of antioxidants, Vitamins A, B6, and C, beta-carotene, potassium, and fiber. They help with inflammation and support eyesight and heart health.

Plus, they’re filling, so they’ll keep you full and energized for hours!
